Happy Hour: S'mores Cocktail

As we discussed earlier today, you could make your own little mini s'mores grill for when you've got a hankering for some chocolatey-marshmellow-graham cracker goodness, or you could drink your s'mores boozey, cocktail-style. Delish recipe after the jump:

S'mores Cocktail 

1 small scoop vanilla ice cream
1 oz Chocolate Liqueur
1 plain/honey graham cracker
2 tsp brown sugar
1 tsp cinnamon
3 mini marshmallows/1 large marshmallow, halved

In a small heatproof glass, top a small scoop of high-quality vanilla ice cream with 1-oz. Chocolate liqueur.
Crush graham cracker and combined with sugar and cinnamon. Pour over top of drink and top with marshmallows. Use a small kitchen torch to caramelize the marshmallows. Serve immediate with a spoon.

Wait, is the liquor used Chocolate or is it Bailey's Caramel? Or dare I use both?

there's definitely a need for more booze in this to make it worthwhile. Might I suggest these substitutions: Vanilla Vodka for the vanilla ice cream Hot Damn for the cinnamon Spiced Rum for the brown sugar Like the Bailey's Caramel idea. Chocolate Liquor is good. Ah, just give me a bottle of vodka or a beer instead.

Rachel, the recipe calls for either one, but I like Jaime's auggestion to use a whole bunch of booze!
