Thanksgiving Tip: Potato Pie

My mother recently taught me how to make potato pie, a dish she serves every Thanksgiving. If you're looking for a last-minute side dish to bring to this years family fete, it's easy enough to whip up, and is tres delicious.

Unfortunately, I don't have a picture to share with you, so you'll just have to use your imagination. It's good. Trust me.

Ingredients:

  • 12 potatoes (2-2.5 lbs.)
  • 4 eggs
  • salt & pepper to taste
  • 1 stick butter
  • 8 oz. fresh mozzarella
  • grated parmesan cheese to taste
  • breadcrumbs 

Instructions:

  1. Butter your pie pan, and then sprinkle every bit of it with breadcrumbs, so there is a thin layer of it covering the entire inside of the pan, even up the sides.
  2. Peel and boil your potatoes, and then mash them along with the eggs, salt & pepper, three-fourths of that stick of butter, and all the cheeses. Put this concoction of awesomeness into your pie pan.
  3. Sprinkle with more breadcrumbs, andspread along the top thin slices of the rest of your butter.
  4. Cook at 350 degrees for 30-45 minutes. It should look browned along the edges.
  5. Let is sit for at least 45 minutes before serving.

 

Oh my holy god yum.
